Kale Salad with Lemon & Parmigiana ingredients 1 bunch fresh Lacinato kale • juice from 1/2 lemon • 2 Tbsp. extra virgin olive oil • 2 Tbsp fresh shallot, finely minced • 1/4 tsp. sea salt • freshly cracked pepper to taste • 2 – 3 Tbsp. grated parmesan • 2 Tbsp. sourdough bread crumbs to make 1. Wash and dry kale. Remove stems from leaves, chop and transfer to salad bowl. 2. Massage lemon juice into chopped kale. Let rest for 15 minutes. 3. Whisk together olive oil, minced shallots, and black pepper. 4. Pour dressing over kale and toss together until combined. 5. Sprinkle Parmigiana and bread crumbs over the salad, toss together; taste, and add squeeze of fresh lemon and pinch of salt to taste. For a richer flavor mix 2 Tbsp grated Pecorino and 2 Tbsp grated Parmigiana cheeses to the salad. 6. Serve with warm, toasted sourdough bread and extra olive oil for dipping.
