Showcase your culinary skills with our recipe for a refreshing Kale Salad with Lemon & Parmigiana, served in a beautiful Acaciaware bowl. The blend of fresh ingredients, with the bitterness of lemon and the richness of parmesan, creates a feast for the senses.
Kale Salad with Lemon & Parmigiana
Ingredients
1 bunch fresh Lacinato kale
Juice from 1/2 lemon
2 Tbsp. extra virgin olive oil
2 Tbsp fresh shallot, finely minced
1/4 tsp. sea salt
freshly cracked pepper to taste
2 – 3 Tbsp. grated parmesan
2 Tbsp. sourdough bread crumbs to make 1
Directions:
- Wash and dry kale. Remove stems from leaves, chop and transfer to salad bowl.
- Massage lemon juice into chopped kale. Let rest for 15 minutes.
- Whisk together olive oil, minced shallots, and black pepper.
- Pour dressing over kale and toss together until combined.
- Sprinkle Parmigiana and bread crumbs over the salad, toss together; taste, and add squeeze of fresh lemon and pinch of salt to taste. For a richer flavor mix 2 Tbsp grated Pecorino and 2 Tbsp grated Parmigiana cheeses to the salad.
- Serve with warm, toasted sourdough bread and extra olive oil for dipping.
